I recently went to my bank to deposit my month’s pay and I was informed that I need to bring a document explaining what I do here in Spain, and untilt hen my account is blocked?!?!. We’re aren’t talking about a very large deposit , 1000 euros more or less. I thought by having a non-resident account I was going to avoid questions like these.
You cannot be a non resident if your working in Spain, once you start playing that card you may well be in for some legal hassle.
(and I know that having all my papers “en regla” would be the obvious choice, but that is another thing in itself now isn’t it?)
I`m no expert on Visa and non EU stuff, but if they`ve frozen your account they suspect you have broken the law, I`d assume immigration have been informed.
And can I apply for an NIE once I’m in Spain on an overstayed tourist visa?
I doubt it, you`ll probably be deported and banned from every returning to Spain, possible any EU state, they could put you in prison if they find you`ve been working illegally.

Again I`m no expert but if you`ve overstayed on a tourist visa you`ll probably be deported and if found guilty banned from entering Spain, usually for life.
If you`ve been working illegally, you could face a jail term.
what do I put in the box on the form asking me to explain my reason for being here, besides that I like it and I’m not leaving? And could they possible tell me no and then throw me out of Spain.

They could throw you in prison, either in Spain or your home country.
Again i`m no expert, but if I were you, I`d speak to a lawyer, soon before you get into more trouble.
