I’m really new to all this and just need a little clarification.

Sorry for appearing totally dumb - as a Britsh national can I come and live and work in Spain freely or do I need a working/residency visa?

What about my Chinese wife, what is her visa position?

I would greatly appreciate any help that can be offered to me and my family.

Yes Adrian, feel free to live and work without permit/visa anywhere in the EU. If your wife has a British passport then she can too.

My wife has a Chinese passport, so what is her position?

I read that I can stay for 90 days and then must apply for a working/residency permit, is that true?
